Tahini Dip

Serves: 4 PrepTime: <10 mins CookTime: 0 mins

1 jar Tahini approx 250g
salt to taste
1/2 to 1 glass of water (depends how runny you like it)
Fresh lemon juice or bottled lemon juice (fresh is better), again to taste
1-2 garlic cloves (optional)


Empty the tahini into large bowl and beat, tahini does sometimes separate in the jar but that's OK just use all of it and beat it up together.

Gradually beat in about 1/2 glass of water then some lemon juice and continue adding more water and lemon alternatively to make the mixture as thick and as lemony as you like, its best to make it thicker and thin it out by adding extra water, be careful not to add too much water. Stir in the garlic and chill in the refrigerator.
